This past Wednesday students in the After School Cooking Class learned more about smoking meats to enhance flavor.  They have been trying different things each week.  They started with meat from smoked turkey drumsticks to make a turkey stew.  Then the next week they converted an old BBQ-er into a Barrel Smoker so that they could smoke some beef steaks.  Yesterday they used the smoker again to smoke some pork chops.  The flavor profiles have been crazy good.  Along with the main courses, they have made side dishes like bbq-ed black beans and lemon poppy seed coleslaw.  Some of the students have liked the side dishes almost even more than the savory meats. Yesterday’s coleslaw went fast.  Damian Beltran was barely able to get some after the big crowd had stormed through when the food was ready for consumption at the end of class. Cooking class is held every Wednesday in Grant’s room after school. Everyone who comes loves the food and has a great time! Make sure to come next week!
